Summer is the best time of the year! Once it starts, nearly most of the Egyptians start fleeing to Alexandria and Egypt's north coast ,which both extend along the Mediterranean Sea, for a fun and stress-free relaxing holiday. So what could ever be a greater meal than flavorsome fresh seafood meals?!
This is a 2 in 1 meal , Mullet fish stuffed with finger-licking shrimp on a bed of potatoes and carmalized veggies 😋 👌
Ingredients:
1 mullet fish
8-10 shrimp , peeled and devein
1 large chopped onions
4-5 cloves of Garlic
2 tomatoes diced
1 cup of mixed colors bell pepper
1 tbsp tomato paste
1 large fried , sliced potato
1 tsp Paprika
1 tsp cumin
1 tsp turmeric
1 tsp black pepper
Salt to taste
Juice of 1 lemon
METHOD:
1- Scrap off the fish scales , cut the fish open , remove entrails and rinse fish inside out.
2- In a cooking pot/casserole, add oil. Sautée the veggies starting by the onions then Garlic. Add diced tomatoes and tomato paste. Give them a stirr. Add the bell peppers.
3- Add all the spices , paprika, cumin, turmeric, black pepper and salt.
4- Add the shrimp. A quick stirr and set aside .
5- In a baking dish , cover the bottom with a little bit of the sauce .
6-Add sliced fried potatoes, cover it with a thin layer of the sauce .
7-Stuff the fish with shrimp and sauce, adding also on the outside of the fish. Lay the fish on the potatoes.
8-Bake in the oven for 20 -30 minutes on 180°c, and enjoy.
