INGREDIENTS:
-700g eggplant
-150g Dry bread
-100g Yellow mozzarella
-50g Parmesan
-1 Tomato
-2 cloves Garlic
-Salt ( to tasty )
-1/4 tsp Pepper
-Basil
-1 Egg
-2 tbsp Olive oil
METHOD:
Make incisions in the eggplant, spread with 2 tablespoons of olive oil, salt and bake in a preheated oven at 180 C/360 F for about 40-45 minutes. Put the old bread in water for about 5 minutes, then squeeze out of the water and make it into crumbs. When baked, carve the eggplant like a boat and cut what you carved. Add to the bread chopped tomatoes, garlic, fresh basil, egg, parmesan, mozzarella, carved eggplant, chopped eggplant, salt and pepper to taste. Stir and fill the boats with eggplant. Sprinkle with 1/2 cup Yellow Mozzarella. Return to the oven at 180/360 for 20-25 minutes and you're done Bon Appetite!
