 Couscous with Shrimp & Clams.


INGREDIENTS: 

-3 cups of couscous 

-cold water , to sprinkle and coat the couscous

-2 tbsp olive oil

3/4 kg Shrimp 

3/4 kg Clam

3 large onions 

2 large potatoes, halved

2 large tomatoes,  grated

1/4 cup tomato paste 

1/2 tsp sugar

1/2 tsp black pepper

Salt to taste

1 tsp turmeric 

1 tsp Paprika 

1 & 1/2 tsp 7 spices or libyan spices "Hararat"

3 cloves of minced garlic






Method:

-Sprinkle drops of water and oil to coat the couscous completely. 

-In a couscossier,  add the couscous. Steam to cook.

-In a pot,add the chopped onions; sautee. Add sugar.

-Add tomato paste and grated tomatoes. 

-Add all the spices;salt & pepper, paprika , turmeric and libyan spice "Hararat " which can be substituted with 7 spices & minced garlic.

-lastly , add potatoes. Add enough water to cover the onions and potatoes. 

-When couscous is nearly cooked , add sauce from the pot ( onions &potato pot)to the  couscous and mix to coat all couscous with sauce.

-When potatoes are completely cooked , add shrimp & Clams ; cook for 10 minutes.
