Zucchini Soup
Easy and Healthy Zucchini Soup | Family Recipe, Watch the video to learn how to properly cook vegetables to preserve vitamins.
INGREDIENTS:
7 small zucchini’s or approx 2 lbs
1 yellow flesh potato
1 onion peeled
1 chili pepper (optional)
1 teaspoon of dry oregano
1 teaspoon of dry parsley
1 cup of fresh basil
2 cloves of garlic squeezed
2 bouillon cubes either beef, chicken or vegetable
3 cups of water
6 tablespoons of olive oil
INSTRUCTIONS:
1. Peel and cut onion, zucchini and yellow flesh potato into cubes.
2. Cut chili pepper into small pieces with seeds.
3. Heat a medium pot over medium-high heat and add olive oil.
4. Add onion and chili pepper.
5. Cook, stirring occasionally until the onion is translucent and tender - about 2-3 minutes.
6. Add 2 cloves of garlic squeezed mixed with onion and chili pepper.
7. Add cut potato and cook until soft.
8. Add cut zucchini and simmer in low heat for 2-3 minutes until soft.
9. Place 3 cups of water in a pot with bouillon cubes (chicken, beef or vegetable).
10. Once the pot comes to a boil, add oregano and parsley.
11. When zucchini is tender, add fresh basil (1 cup) into the pot and turn off the heat.
12. Using a hand blender whirl around until the soup is smooth and creamy.
13. Sprinkle Parmigiano-Reggiano to taste if desired.
