CABBAGE KETO ROLLS
Super healthy, filling and a good alternative to salads . Can store in the refrigerator for a couple of days.
Good to carry these on picnics.
Its upto you to fill in ingredients of your choice.
1 medium size fresh cabbage.
Wash and core out the thick stem from the back.
Boil water with some sugar and salt.
Put the cabbage in the boiling water for 5 minutes.
The leaves will soften and loosen a bit.
Keep on a clean napkin.
Take a big tray and peel off the leaves one by one making 3 or 4 sets of even sized portions of the cabbage leaves.
As you remove keep placing them even sized.Like 1,2,3. Then repeat again till you have 4 or 5 leaves in each portion.
Then cut the middle bone in a long V shape and keep those aside for making a vegetable stock.
I kept them for my 3 loving doggies.
FILLING
Mix some boiled chicken with mayonnaise.
Cut a few fine juliens of carrots and long thin strips of cucumber.
I collected some micro greens and baby rocket and salad leaves together.
Mix them in some seasoned hung yogurt.
Thin plain omelette with cheese.
Add salt and pepper to all the ingredients.
Now place one cabbage leaf with its round edge towards you.
Over lap the other a bit to fill the gap on the opposite side which will make a circle.
Now you have to pile the above collected ingredients as you like.
I spread the chicken first.
Repeat the cabbage leaves again.
Then the carrots and cucumbers layer.
Repeat cabbage layer.
Next thin omelette and salad greens together.
Place smaller leaves on top.Even if they tear you may over lap and use.
Then carefully roll.
Get some one to open up the cling film and place the cabbage roll and wrap 3 or 4 times over.Cut the cling film and twist up the 2 ends.
Keep in the the refrigerator to chill well.
Cut diagonally with a sharp knife and enjoy.
NOTE - please do not make more than 3 layers as you will not be able to roll neatly.
Also ensure all your ingredients are very finely cut which makes rolling easy.
When eating just keep sliding down the cling film as you bite in.
